Austin Lager - 5% abv - Vienna Lager (7A)


Name: This beer just feels like home. When kicking around a name for this style we got caught up in lots of hard to pronounce words invoking memories of trips to visit the region, or the rich history of Vienna. Again, this beer just feels like home.

Style: Vienna Lager (7A in the 2015 BJCP Style Guide) isn’t really made in its home region anymore, but it has a thriving new life south of the border in Mexico. This style tries to thread the needle - malty, but not TOO malty; some recognizable hop flavors and presence, but not TOO much; not too strong, not too dark, yada yada…. It is a nice waypoint between light continental pilsners and more malty versions such as Schwarzbier and Bock.

Story: Sometimes, life slows down and shows you an every day comfort - don’t ignore those opportunities. Recognize them, and embrace them. This is our everyday beer, it’s a little bit of something for everyone and not too much of anything for anyone. It’s made slow and with a great deal of care - the way comfortable and memorable things should be made.

Ingredients: My goodness, the ingredient preferences for Vienna Lager can be all over the place. We chose to embrace the tradition and the meaning which resulted in a beer that was (surprisingly?) built with Vienna Malt! We added a little Pilsen to balance the VERY light touch of specialty grains used to amplify and develop the malt flavors we wanted to highlight - they also coaxed a gorgeous color out of the project! A nice German noble hop keeps it right where you want to be. Choose a classic German lager yeast and you are ready to roll.

Methods: Shoot for a middle mash temp if you are playing in the low to center of the ABV range, but if you go higher then lower it a bit. Hops are background to the malt flavor profile, but VERY important. A first wort addition and a later addition (15 to 5 minute) is suitable.

Recipe Box:

Vienna malt - 88%
Pilsner malt - 5%
Light Munich malt - 3%
Caramel Munich Malt - 3%
De-husked black/chocolate malt - ~1% (use to achieve proper color)

20IBU of Noble Hops at First Wort
25% of the above charge of Hops at 5min

German lager yeast, from a buddy if you can

Brewing Method:

Gravity targets:
* OG 1.054, FG 1.012

Adjust water to achieve mash of:
* 5.40pH and 1.1:1 ratio of SO4/Cl

Standard mash thickness
151-153 degree mash temp target
Sparge with 175 degree 6.0pH water with same salt profile as mash
60 minute boil
