Name: This beer is interesting. Its small by weight, but packs an enormous flavor punch. Its been around a long time in our lives, and it’s one of the brewer’s favorites. Oscar Wilde is interesting, and it seemed to fit.

Style: The Dark Mild beer style (13A in the 2015 BJCP Style Guide) is typically British in origin and utilized British ingredients. It is designed to be drinkable for long periods of time due to its lower alcohol content. Mild, as a term in this context, was never meant to designate a lower flavor output - it was just a monicker at the time for beer that was not aged (as many other styles were at the time).

Story: Undoubtedly this beer has been brewed more times and had more experimentation than any other in our brewer’s repertoire. Finding the right balance of flavor when your flavor scaffolding (alcohol) is less prevalent take practice, and patience. Lower alcohol beers have always been a part of our options, and this is one of our favorites!

Ingredients: Five British grains come together to build the framework of this beer. Hops and yeast are important, but only to drive the ultimate blended malt flavor. Primarily British Maris Otter malt is enhanced with Brown Malt, Chocolate Malt, Wheat Malt and some Special Roast. The yeast is classic English Ale yeast and the hops are purely traditional and regional with UK Fuggles and UK East Kent Goldings.

Methods: This beer uses a mash temp on the high side to enhance the body of the final product. Additionally, we use some salt additions to reinforce that enhancement. The fermentation curve and hop additions are fairly straightforward. This is not a difficult beer to produce, once you have your balance of specialty malts dialed in.

75% above charge of UK East Kent Goldings hops at 15min

Brewing Method:

Gravity targets:
* OG 1.045, FG 1.012

Adjust water to achieve mash of:
* 5.45pH and 0.8:1 ratio of SO4/Cl

Standard mash thickness
154-155 degree mash temp target
Sparge with 175 degree 6.0pH water with same salt profile as mash
60 minute boil
